Induction cooktops heat the pan directly through a magnetic field, so the pan itself is half the appliance: it must have a ferromagnetic base, and the flatter and heavier that base, the better the contact and the more even the heat. The quick test in a store is a fridge magnet — if it grips the base firmly, the pan works on induction.

The label 'induction compatible' hides a real quality range. Fully-clad construction — layers of stainless and aluminum bonded through the whole pan body — heats evenly to the rim. Cheaper disc-bottom pans concentrate heat in the center and can cycle the cooktop's power. Cast iron and carbon steel are induction-native and nearly indestructible, at the cost of weight and seasoning care.
